Day 4 of 42to42

Today is my normal rest day, but because I used that a few days ago - I at least did 30 minutes on the bike.  Rainy gloomy day, been in the house since we got home from church, which was Aiden's first communion.

Celery and roasted red pepper hummus - snack

Supper was shrimp, flat leaf parsley, and tomatoes and black beans. This will be my lunch several days this week with added brown rice and maybe a little feta cheese.


THIS WORKS!  Snip the ends of your herbs and put in water in a glass and then loosely cover with a plastic bag and keep in fridge.
